http://www-mice.cs.ucl.ac.uk/mice/ is a pretty good overview of
multimedia conferencing but dated

NV: source code is available at
ftp://beta.xerox.com/pub/net-research/nv-3.3beta/nvsrc.tar.Z

vat: http://www-nrg.ee.lbl.gov/vat/

ocp: I assume this is an Open Continue packet for CU-SeeMe? Best bet to
learn about that is to grab the Cornell 3.0b3 reflector source code at
ftp://cu-seeme.cornell.edu/pub/CU-SeeMe/Reflector/3.0b3.dist/3.0b3.tar

RTP:
ftp://ftp.ds.internic.net/rfc/rfc1889.txt for RFC 1889 for RTP and
ftp://ftp.ds.internic.net/rfc/rfc1890.txt for RFC 1890 for RTCP.
http://www.cs.orst.edu/~kleinro/nacse/rtp/ good intro page
http://www.cs.columbia.edu/~hgs/rtp/ a decent FAQ on RTP

unicast: I'm not sure where to find info on this...Richard Stevens' books
for unix socket programming talk a bit about unicasting and compare it to
multicasting. Unicast = point to point

I also have a small page up on RTP that I'm doing for class but that
should get you started.
